Please be aware that the Margaret River Dairy Company manufacturing facility in Margaret River WA was unfortunately damaged in a fire on the 29th of December 2012 that has destroyed a large part of the site.

As it stands we will be unable to supply yoghurt, ricotta and fetta products under the Margaret River Dairy Company brand, however we still range a variety of local and imported fetta, ricotta and specialty cheese products.

The Cheddar Cheese and Soft ripened Cheese facilities were not affected and as such, full supply of Margaret River Dairy Company Cheddar, Camembert and Brie products can be expected.

Brie & Camembert

Description:
Brie & Camembert are classic soft ripening cheeses. These cheeses are surface ripened to produce a bloomy, white rind that covers the cheese and matures over time.

Brie has a golden, buttery interior and ranges in flavour from mild to strong, depending on the age.

Camembert is similar to Brie however it has a more fluid consistency. The interior varies from yellow, waxy or creamy – depending on ripeness – and the flavour consists of mushroom undertones.
Storage:
Brie and Camembert cheese should be stored in waxed, porous paper to ensure the cheese can continue to “breathe” and ripen over the life-span of the product.
Preparation:
Brie and Camembert are delicious served at room temperature and should be removed from refrigeration approximately one hour before serving.
Wine Recommendations:
Depending on your palate, Brie and Camembert cheeses can be served with either white or red wines. If you enjoy white wine, choose a fruity wine such as Chardonnay or a sparkling wine. For red wines, a Bordeaux or Pinot Noir is recommended.

Cheddar

Description:
Cheddar cheeses are acidified and salted in the curd, then shaped in a mold and ripened. It is available in a range of ages from one month to five years and also comes in a variety of flavours – smoked, mild, medium, aged and sharp to name a few.

The Margaret River Dairy Company Cheddar Cheeses are handcrafted & preserved in wax for a truly gourmet cheddar experience. The waxed coating prevents the cheddar from drying out and enhances the flavour.

The range consists of a Vintage Cheddar that is aged for a minimum of 12 months and a variety of Club Cheddars. Club Cheddars are softer and more crumbly in texture and allow for condiments or seasoning to be added throughout the product process. Margaret River Dairy Company’s Club Cheddar range includes Original, Smoked, Port and Sweet Chilli.
Storage:
Due to the long life of Cheddar, once open, Cheddar will last for at least two weeks if it is well wrapped and refrigerated. If any mould starts to grow on the cheese, simply cut off approximately 2cm from all sides of the visible mould.
How to cut waxed cheese:

Peel off the label.

Slice the wax completely off the top and bottom edge of the cheese.

Place a small cut down the side cutting into the wax only.

Feta

Description:
Feta cheese dates back centuries and is characterized by its chalky white appearance, crumbly texture and salty flavour. Feta is usually packed in brine, however it is also delicious marinated in a mixture of herbs and spices.
Storage:
Store Feta well wrapped in cling wrap or in it’s original packaging in your refrigerator.
Preparation:
As Feta is usually stored in brine to preserve its shelf-life, to reduce the salt content, rinse in cold water and dry before serving.

Feta is popular in salads, used as a topping, or in baked recipes.
Wine Recommendations:
Feta can be enjoyed with either light white wines such as Sauvignon Blanc, or fruity red wines.

Breads: Pita Bread, Lavosh
Condiments: Kalamata Olives, Red Peppers, Fresh Herbs

Baked Ricotta

Description:
The word Ricotta is Italian for “recooked” and is the whey collected from the process of making certain types of cheeses.

Ricotta is a soft, grainy cheese and is low in both sodium and fat.

Baked Ricotta is twice-cooked and delicious in both plain and flavoured varieties.
Storage:
Baked Ricotta stores best in the vegetable crisper of your refrigerator. Keep cheese well covered in the original packaging, or cling wrap.
Preparation:
Baked Ricotta is very versatile and can be added to a cheese platter, salad, pasta dish, or used as a dessert cheese.

Creamy Pot Set Yoghurts

Description:

Our yoghurts are produced in the traditional “Pot Set” way -  the yoghurt actually sets in its own individual pot. This manufacturing process requires more time and care, which results in a more unadulterated, natural product. 

 

The process begins by gently depositing the fruit into the bottom of each pot, followed by the premium quality Western Australian milk and ABC Probiotics. The pots are then immediately sealed with an aluminium foil lid to hold in all the freshness and goodness and placed into a specially prepared incubation room where the Natural Probiotic bacteria transforms the milk into yoghurt. It takes approximately 10 hours for bacteria to do its work and for the yoghurt to naturally set. No gelatine is added throughout the process. The tubs of yoghurt are then cooled to preserve the cultures in a live state.
  
Many other “stirred” yoghurts stir the fruit through the yoghurt prior to setting and also add gelatine to to create a thicker texture in the yoghurt. These additional processes can cause disruption to the Probiotics within the yoghurt.
  
Margaret River Creamy Pot Set Yoghurt retains all of the goodness of the fresh milk and fruits with the added benefit of the Probiotic Cultures. This process means the fruit pieces remain on the bottom of the pot until you give it a good stir and the more you stir, the smoother it becomes.

Preparation:
STIR WELL before eating - due to the traditional Pot Set process the fruit remains at the bottom of the tub. Stir well for delicious flavoured smooth yoghurt, the more you stir the smoother it becomes.
